At Craft Beverage Jobs, we are big fans of kombucha. If you’re not familiar with this ancient craft beverage, it’s produced by fermenting tea with a culture of yeast and bacteria known as SCOBY (Symbiotic Culture of Bacteria & Yeast). The result is a delicious, effervescent tea, possessing a variety of health benefits.
While other craft beverages, like craft beer and craft soda, are making headlines for industry growth; kombucha is also making a name for itself. In 2014 kombucha sales increased 30%. According to Kombucha Brewers International (KBI), kombucha is the fastest growing functional beverage category in the United States.

With the increased growth and projections for the future of kombucha, U.S. retailers are taking notice and expanding shelf space for the category. The versatility of kombucha allows for a variety of flavor profiles and ingredients, giving consumers a wide range of choices. For example, Whole Foods Market sells over 20 locally produced kombucha teas.
Kombucha Brewers International
Kombucha Brewers International is a trade association dedicated to commercial Kombucha Brewers all around the world. Most kombucha brewing companies in the KBI family started as homebrewers whose passion for fermented tea drove them to take the step into commercial production. Kombucha Brewers International was created to help promote and protect these commercial brewers, giving them the tools to grow the industry.
Over 50 kombucha brewers have joined the KBI team, and they represent kombucha businesses coast to coast in the USA and abroad. These brewers depend on KBI for leadership in a number of areas, such as proper business practices, product safety and quality, alcohol compliance, and product labeling.
KBI not only works to support the needs of its membership, it also acts as an ambassador for kombucha to the public. This includes the creating of educational materials, social media promotions and building consumer awareness.
